Ingredients

Main Ingredients

  • 1 package gnocchi
  • 6 slices bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth For richer flavor, consider using homemade broth.
  • 1 cup heavy cream For a lighter version, consider swapping with half-and-half or a non-dairy alternative.
  • 2 cups shredded cheddar cheese Feel free to use a combination of cheeses for different flavor profiles, such as gouda.
  • Salt and pepper to taste Bacon can be quite salty, so adjust with caution.
  • Chopped parsley for garnish Adds color and freshness.

Instructions

Preparation

  • In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  • In the same pot, add the diced onion and garlic to the bacon drippings and sauté until softened.
  • Add the chicken broth and bring to a simmer.
  • Stir in the gnocchi and cook according to package instructions.
  • Reduce heat and stir in the heavy cream and shredded cheddar cheese until melted and smooth.
  • Season with salt and pepper to taste.
  • Serve hot, topped with crispy bacon and chopped parsley.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. When reheating, add a splash of chicken broth or cream to regain creaminess. For a thicker soup, blend a portion of it or use cornstarch mixed with cold water.
